Spring hasn't even arrived yet (although it feels a lot more like it this week), and we are already inundated with eggs. After receiving 2-4 eggs most days throughout the winter, suddenly we are getting 5-7 per day almost every day, and we are swimming in eggs! We've been giving them away to friends and neighbors, and my husband is looking into some of the various egg preservation methods, but in the meantime, we are just eating a lot of them!

We plan out our dinner menus for the week with eggs in mind, stock the fridge with bowls of hard-boiled eggs for salads and snacks, and enjoy them for breakfast whenever we have a few minutes to whip some up. We ran out of homegrown greens to feed the hens a few weeks ago, so the yolks are currently as pallid as store-bought (although I've read that French chefs simply call these "winter eggs"). We are looking forward to brightly-colored spring and summer eggs, and in the meantime, I have started sprouting some wheat grass for the hens to try to give them at least a bit of greenery...

Regardless, with eggs on the brain right now, this week I thought I'd share a simple and delicious eggs Benedict recipe. This is a keto-friendly version of the old classic, so even if you're low-carb or gluten-free, you can still enjoy this tasty breakfast. It looks super fancy, but it's surprisingly easy to make!

Recipe: Chocolate Chip Immunity Cookies

I don't know about you, but while I'm not usually a huge sweets fan, I always seem to crave them in the dead of winter. Maybe it's the little "pick-me-up" I get from the sugar, or perhaps it's just that when it's unendingly cold and dreary out for weeks on end, at least my tastebuds can give me a bit of joy?

Unfortunately, sugar is a big no-no for the immune system, so I have to balance my cravings with my desire to stay healthy. Sometimes the cravings do win out, I'll admit... Which is why I was excited to find this recipe for chocolate chip cookies with immune-boosting ingredients!

Sadly, eating cookies will not make you healthy. However, if you're going to eat cookies anyway, why not include some good-for-you stuff in the mix? These will satisfy your sweet tooth and the warming spices are perfect with a hot cup of tea on a snowy winter afternoon!

This tasty recipe includes immune-boosting astragalus and shiitake mushroom powder (you can also make them with lion's mane, or other mild-tasting mushrooms, but be sure to avoid any with strong or bitter flavors). Feel free to substitute gluten-free flours if you prefer.

How to Cook a Perfect Pasture-Raised Turkey

While we usually try to find an "all-natural" and humanely raised turkey for Thanksgiving, this is the first year that we've actually gotten a truly free-range pasture-raised turkey from our local farmer.

Since it's just the hubby and I this year, we wanted a smaller bird, which meant we could avoid spending $75 on a turkey - which still seems exorbitant to me no matter how high-quality the meat is...

We have gotten used to the amazing flavor of the pasture-raised chicken that we buy from the same farm, so I'm excited to see how the turkey turns out!

However, as with other pasture-raised meats, we are aware that it may cook differently from the conventionally raised alternative, so we were looking for some instruction. Fortunately, I discovered the recipe below, and this is how we intend to cook our pasture-raised turkey this year. I'll have to let you know how it turns out, but the comments on the site were all very positive, so I have high hopes!

Homestead Recipe: Ground Cherry Jam

Ground cherry jam
We started growing ground cherries (also known as husk cherries) a few years ago, and not knowing how productive they would be, I planted 4 plants. These produced a ridiculous amount of fruit, and after eating and giving away as many of them as we could, as well as freezing quite a few, they were still producing and I was at a loss as to what to do with them.

Fortunately, my awesome husband found me the amazing recipe below, and I've made at least one big batch of ground cherry jam every summer since!

This is my go-to recipe and I've never used any others - I love it as it's super simple, tastes amazing, and is also low-sugar. I would describe this jam as tasting like "if caramel was a fruit and you made jam out of it". However, for even more rich caramel-y flavor, try using demerara or turbinado sugar. YUM!

If you've been reading this blog for a while, you are probably aware that I am slightly obsessed with fermentation. :-) This is rather interesting to me, given my natural penchant for control, as fermenting things so often has unpredictable results!  Case in point: my recent experiment with making homemade dandelion wine for the first time.
