Immunity boosting cookie recipe
I don't know about you, but while I'm not usually a huge sweets fan, I always seem to crave them in the dead of winter. Maybe it's the little "pick-me-up" I get from the sugar, or perhaps it's just that when it's unendingly cold and dreary out for weeks on end, at least my tastebuds can give me a bit of joy?

Unfortunately, sugar is a big no-no for the immune system, so I have to balance my cravings with my desire to stay healthy. Sometimes the cravings do win out, I'll admit... Which is why I was excited to find this recipe for chocolate chip cookies with immune-boosting ingredients!

Sadly, eating cookies will not make you healthy. However, if you're going to eat cookies anyway, why not include some good-for-you stuff in the mix? These will satisfy your sweet tooth and the warming spices are perfect with a hot cup of tea on a snowy winter afternoon!

This tasty recipe includes immune-boosting astragalus and shiitake mushroom powder (you can also make them with lion's mane, or other mild-tasting mushrooms, but be sure to avoid any with strong or bitter flavors). Feel free to substitute gluten-free flours if you prefer.

Superbugs & Antibiotic-Resistance
In recent years, misuse and overuse of antibiotics has come to the forefront in many health circles, as more and more "superbugs" have emerged. Superbugs are created when an antibiotic is used but does not kill all of the bacteria it was supposed to target. The bacteria that survive multiply and evolve greater and greater resistance to the antibiotic, until eventually, they are basically immune to the effects of the antibiotic.

Ever stronger antibiotics have been created to try to deal this problem, but eventually some fear that most or all antibiotics - even the strongest ones - will be ineffective against these superbugs, and we will be back where we started - before the discovery of antibiotics completely changed modern medicine and eliminated many of the diseases that then plagued humankind. And some experts fear that it is already too late...

According to the CDC, nearly 3 million people in the U.S. are infected by antibiotic-resistant bacteria every year, and over 35,000 die. Worldwide, the problem is even worse, with the WHO reporting that 700,000 people die annually from drug-resistant infections.

However, even with the prevalence of superbugs, antibiotics continue to often be prescribed indiscriminately, and they are still routinely fed to livestock - which compounds the problem. It's January, which means I would usually be sharing my New Year's Resolutions and goals for the year. But this year, with our interrupted vacation plans due to COVID-19, and the changes to our travel schedule, I just wasn't feeling the New Year spirit... Anyway, personally I felt pretty much on track last year, and don't have any major changes that I feel the need to commit to right now.

So, instead, I thought I'd share a quick homestead update, as it's been a while! In fact, I'm not sure I've posted one since we've had chickens, and there are SO many things about this experience that I've found surprising or unexpected over the past few months...
