Of course, just like with any food, the source of the egg does matter, so make sure you are getting eggs from pasture-raised chickens if at all possible - or even better, your own backyard! :-) (We are working that this year, ourselves, but in the meantime, fortunately we have a neighbor who usually keeps us supplied with really good eggs for most of the year.)
