Of course, just like with any food, the source of the egg does matter, so make sure you are getting eggs from pasture-raised chickens if at all possible - or even better, your own backyard! :-) (We are working that this year, ourselves, but in the meantime, fortunately we have a neighbor who usually keeps us supplied with really good eggs for most of the year.)

This recipe is full of healthy fats and protein, and you can use your choice of bread. Our favorite is one of the sprouted multi-grain breads from Aldi, or any of the Dave's Killer Bread varieties.
The recipe below serves 1 hungry person, but can easily be adjusted for more people.
Avocado Toast With Fried Eggs
Serves: 1
Time: 10 Min.
Ingredients:
- 2 eggs (fried sunny side up)
- 2 slices of multi-grain or whole grain bread (toasted)
- 1 small avocado
- 1 teaspoon lime juice
- sea salt + black pepper (to taste)
- parsley (optional for topping)
Instructions:
- Prepare toast and fried eggs to personal preference.
- Peel and mash avocado with the lime juice, salt and pepper.
- Spread avocado evenly on each slice of toast then top each with a fried egg and any additional seasonings you prefer. Serve immediately.
Feel free to put your own spin on the recipe - for example, add some sliced or diced ripe tomato, fresh herbs, or a drizzle of balsamic vinegar - for some variation.
How Healthy Is It?
Whole eggs from pasture-raised chickens are not only a great source of complete protein, but they also contain lots of Vitamin D, Vitamin A, the carotenoids lutein and zeaxanthin, and healthy Omega-3 fatty acids.
Avocados are loaded with healthy polyunsaturated and monounsaturated fats, as well as lots of fiber plus potassium, folate, Vitamin K, Vitamins B5 and B6, and 15 more vitamins and minerals.
The bread you choose can be as healthy as you like, but if you're looking for the best, sprouted wholegrain bread is supposed to be the healthiest - both in terms of nutrition and ease of digestion - plus, it's generally much more flavorful than other types of bread.
