If you've been following this blog for a while, you probably know that I'm a big fan of regenerative agriculture. While I don't believe it's the solution to all the world's problems, I do think that it can go a long way towards solving some of the health and environmental issues we are facing today.

I do feel that we eat far too much meat here in America, so I'm not saying that simply switching your daily meat source to regeneratively-raised meat is the whole solution. However, I do believe that if we all reduced our meat consumption (say, to once per week), and we chose to eat ONLY regenerative meat when we do so, this could go a long way.

We’ve all heard the phrase “food is medicine” - but as Dr. Mark Hyman reminds us in this powerful podcast episode, it’s not just a catchy slogan. It’s a biological truth.

I'm back this week with another episode in our ongoing Gut Health series! This week, we're talking about the importance of fiber for gut health.

We've probably all been nearly "fibered" to death over recent years, with everyone and their grandfather talking about how important fiber is for your health. (Even sugary breakfast cereals filled with artificial flavors and colors claim to be "heart healthy" because they include fiber!) But the unfortunate truth is, many people STILL don't get enough fiber in their diets - or at least not the right balance. 

You see, there are different types of fiber, and the way that you consume your fiber does make a difference. It's not as simple as adding a scoop of "fiber powder" supplement to your morning smoothie. Different types of fiber come from different foods, and as is true with most aspects of health and nutrition, the source matters!

The fact is that fiber isn't just bulk in your diet – it's the foundation of a healthy gut ecosystem. Despite its inability to be digested by human enzymes, dietary fiber fuels the trillions of microbes living in your digestive tract, turning your gut into a thriving biological community.

The relationship between fiber and gut health is profound yet often overlooked in our modern diets. While processed foods dominate grocery store shelves, your digestive system craves the complex carbohydrates that humans have consumed for thousands of years. Without adequate fiber, your gut microbiome becomes imbalanced, leading to a cascade of digestive and even systemic health issues.

Homestead Update & Recipe: Getting Comfortable with Sourdough

I've dabbled with bread making a number of different times over the years, from making my own sourdough with wild yeasts, to regular yeasted breads, to even using a breadmaker. I've had varying degrees of success, but never really felt I mastered it - especially with sourdough, which was never quite the texture I wanted. But this summer, I've revisited the crusty goodness of homemade sourdough to a greater extent than I have in years.

It all started several months ago when I visited a good friend whom I hadn't seen in a while, and she served me hot, fresh sourdough bread right out of the oven. It was a revelation - warm, soft, and chewy, with the perfect crust! I ate so many slices I barely had room for the rest of the meal!

I raved about it so much that, at the end of the visit, she poured some of her sourdough starter into a jar and sent it home with me. I made my own loaf a couple of days later, and while it was good, it couldn't match hers.

I reached out to her for ideas and also revisited my old sourdough recipe that I had made years ago. By combining these tips, I began to gradually improve my results with each batch. In doing so, I have learned a lot, and have enjoyed lots of fresh bread throughout the summer!

I've also experimented with using up excess starter, though my favorite way to use it is these amazing and super easy pancakes! (Even my husband loves them, and he's not usually a pancake fan.)
