I remember standing beside my mother, watching as she slowly poured oil into the blender with the brilliantly orange eggs I had collected that morning, along with salt, mustard, and vinegar, forming a creamy yellow spread.
Ours never looked anything like the thick, gelatinous, almost bleached-white stuff in the jars that my grandmother and grandfather sometimes brought along when they visited.
Of course, that meant theirs was much more special to us kids! Consequently, I never realized just how tasty homemade mayo really was until I grew up. Now I am surprised how few people actually make their own - especially since it's so easy.
All you need are 5 simple ingredients and a blender or food processor to make your own homemade mayonnaise from scratch in just 5 minutes!
These days, there are a wide variety of healthier oils that you can use instead of the old-school canola or corn oil that my mother used back when that's all that was readily available. You can experiment with oils like walnut, olive, sunflower seed, and avocado oils to see which you like best - or use a combination. We like ours with mostly avocado, with just a touch of olive oil.
Here's a good basic mayo recipe, adapted from FramedCooks.com.
How to Make Homemade Mayonnaise
(Makes about 1 cup.)
Ingredients:
- One egg from pasture-raised hens, room temperature
- 1/2 teaspoon salt
- 1/2 teaspoon mustard powder (OR 1 tsp prepared mustard - Dijon works best)
- 1 1/4 cup light olive oil, safflower oil, or other oil(s) of your choice
- Juice from 1/2 lemon
Instructions:
- Put egg, salt and mustard powder in a food processor or blender. Process until combined.
- With the machine running, pour in the oil as slowly as you possibly can – a teeny trickle. Blend until the oil is fully incorporated and your mayo looks like mayo!
- Gently stir in the lemon juice.
- That’s it! Simply store in the fridge and enjoy within a week or two.
Once you see how easy it is, you may never feel the need to buy store-bought mayo again! Unlike most mayonnaise found at the store, this one has no sugar, no preservatives, and you can control exactly what's in it, avoid unhealthy oils, and make sure it's always fresh.
